Yavam or barley is praised by Ashtangahrdayam as one of the best diet helpful in diabetes. One of the most ancient cereals described in Atharva Veda, Yavam was an important element in auspicious ceremonies of those times. It helps pacify Kapha and Pitta doshas and is beneficial in Prameha & Sthoulya. It helps maintain healthy blood glucose levels and work as a wholesome diet. RECIPE:

Ginger Mint Barley Lemonade

Prep time: 45 minutes

Serves: 4

 

INGREDIENTS:

  • 1 cup barley
  • 6 cups water
  • Fresh mint leaves
  • ½ tsp fresh grated ginger
  • ½ tsp ground black pepper
  • ½ tsp pink Himalayan salt
  • 2 tsp sugar of choice
  • 3 lemons washed

 

INSTRUCTIONS:

Rinse the barley thoroughly with water, strain and place in a large saucepan. Cover with water and place on high heat. Bring to boil, and then reduce to simmer. Cook for about 30  minutes, or until the barley is soft. Once barley is cooked, strain out the barley and save the barley water. Set the barley aside.

When the barley water is cooled down, add the lemon juice, sugar, ginger, ground pepper, and salt. Mix well until the sugar dissolves. Taste, and adjust sweetness to your liking. Pour, muddle with fresh mint leaves and enjoy on a hot day.
