RECIPE:

Brown Chickpea Salad

Prep time: 5 mins

Serves: 1

 

INGREDIENTS:

  • 1 cup of Organic Brown Chickpea, boiled
  • 1 onion, chopped
  • 1 bell pepper, cubed
  • 1 cucumbers, sliced or cubed
  • Handful of fresh cilantro leaves
  • 1 small cube feta cheese.
  • 2 tbsp lemon juice
  • 1tsp each of spices: cumin seeds, red chili flakes, dried mint leaves

 

DRESSING:

  • 4 tbsp olive oil
  • 2 tbsp lemon juice
  • 1 tbsp black peppercorns, ground
  • 4 fresh mint leaves, chopped
  • Pink Himalayan salt to taste

 

INSTRUCTIONS:

Combine boiled chickpeas, cucumber, bell peppers, onions and spices in a bowl and toss until well mixed. In a separate container, add olive oil, lemon juice, ground peppercorns, chopped mint leaves, and salt. Blend until well combined. Once dressing is ready, drizzle as desired over the spiced chickpeas and vegetable mixture. Toss together once more so that all ingredients are glazed and oh-so-ready to eat!
